Village Farm Exploration

Canaries is a small village on the St. Lucia’s west coast which has history rooted in fishing and agriculture. Originally settled by the indigenous Amerindians, the area later saw the arrival of European colonizers. The community has kept the fishing and agricultural culture alive. We invite you to take a short trip with us to one of the village farms owned by seven (7) brothers. Cocoa is one of the many crops grown on the farm and we are happy to say that Cacoa Sainte Lucie continues to make sustainable impact by using local farms to create St. Lucian Chocolate.

After you have explored the farm and now understand the cocoa cultivation process, prepare to indulge in a chocolate sensory tasting near the Canaries River. Let your taste buds guide you as we test and tease you with couverture chocolate. Once you have completed your sensory tasting you will now be aware of what tolook for in premium Chocolate.

Chocolate Making Experience

Now we come to the highlight of your trip. Bean to bar chocolate is the transparent and unique process of crafting cocoa into delicious high-quality bars. No preservatives, simple ingredients and transparent way of making chocolate. From the farm tothe small factory, you will discover the craft and science of the bean to bar process by tempering molding and personalizing your chocolate. With a variety of inclusions and topping, you will be delighted
to realize you have now completed your very own St. Lucian Chocolate bar.

Cocoa Infused Lunch

With a picturesque view of Canaries hills and valley, we invite you to our open-air restaurant setting for a delightful and surprising infusion of a cocoa lunch. As the world of culinary infusions continue to evolve Cacoa Sainte Lucie aims to delight its guest with fresh food grown from surrounding farms in the village of Canaries.

On your way Back to the hotel, enjoy a bird’s eye view of our capital city. Feel the wind on your face as you take in the beautiful scenes.
